Easy Pancake Recipe
Not just for pancake day (Shrove Tuesday) !!Pancakes are a delicious easy to make treat all year round, topped with all manner of fillings and sauces this easy pancake recipe will make life much easier for you.
Ingredients
100g plain flour
2 free range eggs
300ml semi skimmed milk
1 tbsp sunflower oil, melted butter or vegetable oil, plus a little extra for frying pancakes
small pinch salt
Using This Easy Pancake Recipe
Sieve the flour along with a pinch of salt into a mixing bowl and make a well in the centre.
Break the eggs into the well, then pour in around 50ml milk and 1 tbsp oil or melted butter.
Start whisking outwards from the centre of the bowl, gradually mixing the flour into the eggs, milk and oil or butter.
Once all the flour is blended in, beat the batter until you have a smooth, thick paste. Add additional milk if it is too stiff to beat smoothly
Add a decent glug of milk and whisk briskly to loosen the thick batter. As you continue whisking, team in a steady stream of the remaining milk. Continue pouring and whisking until your pancake batter is the consistency of slightly thick single cream. Place the batter in the fridge for 30 mins and allow to rest.
Heat the frying pan over a medium heat,add a small knob of butter, pour the melted butter into your batter mix then wipe the pan with oiled kitchen paper.
Ladle some batter into the pan, tilting the pan to move the mixture around for a thin and even pancake. Pour off any unwanted batter as quickly as possible into a jug, return the pan to the heat. Now just have patience and leave it alone, undisturbed, for around 30 secs. Pour the excess batter from the jug back into the mixing bowl.
If the temperature in your frying pan is correct,and you have followed the easy pancake recipe correctly, the pancake should turn golden underneath in about 30 secs and will be ready to flip.
How To Flip Pancakes
Hold the frying pan handle firmly, gently slide a fish slice under the pancake, then quickly lift and flip it over. After flipping make sure the pancake is sitting flat against base of the pan with no tucks or wrinkles, then cook for another 30 secs or so before turning out onto a warm plate.
