Welsh Rarebit With Tomato’s
Welsh rarebit is basically posh cheese on toast or grilled cheese as some may say. The name welsh rarebit or sometimes welsh rabbit, was first used for this dish as far back as the 18th century in Great Britain.
Welsh rarebit consists of a savoury sauce made from cheese that is gently melted, and other ingredients that are added according to individual taste and family tradition. The sauce is thickly spread onto warm toast and grilled until bubbling and golden.
The basic welsh rarebit recipe is very easy to make and can be enjoyed as a family supper or a summer lunch topped with roasted vine tomato’s and a fresh salad garnish. It can also be eaten and enjoyed as it comes without any garnish or extra toppings. It makes a delicious alternative to cheese on toast.
Ingredients

50g or 2oz plain flour

50g or 2oz salted butter

250ml or 9oz Guinness or your favourite dark ale heated and kept warm.

250g/9oz Grated mature cheddar cheese.

2tsp Wholegrain mustard

2 tbsp Mushroom ketchup or Worcestershire sauce
- Handful of tomato’s on the vine drizzled with olive oil and dried oregano

Freshly ground black pepper to taste

4 slices of freshly cut bread, sliced as thick as you want.
- Sprinkle smoked paprika
Easy Welsh Rarebit
Preheat the oven to 200C/400F/Gas 6.
Place the prepared vine tomato’s into a small roasting dish, place in the centre of the oven and roast for 10-12 minutes. Set aside and keep warm.
Add the flour and butter to a saucepan to make a roux . Cook the flour and butter for a couple of minutes, stirring constantly to prevent it from burning. Add the still warm Guinness to the pan stirring to make a thick but smooth sauce. Add in the grated cheddar and stir until the cheese has melted. Add the wholegrain mustard and the mushroom ketchup or Worcestershire sauce and season well with black pepper.
Preheat the grill to high. Toast and butter the thick cut bread bread,pile on the cheesy rarebit mixture. Grill for a few minutes, until bubbling and golden. Slide out of grill, add a sprinkle of smoked paprika and top with tomato’s. Flash under grill for a further 30 seconds then serve immediately.
The simplest and the tastiest Welsh Rarebit.
