Ingredients For Leek and Potato Soup With Parsnip
- 1 Large knob of butter.
- 2 Large leeks, chopped.
- 6 to 8 medium potatoes, peeled and diced.
- 1 Large Parsnip.
- 1.5 Ltrs Chicken or Vegetable stock.
- single cream or creme fraiche for swirling (optional)
- Salt And Freshly Ground Pepper to taste
How to Make This Delicious Soup
- Gently melt the butter in a pan. Add chopped leeks, A grind of black pepper and cover, cooking slowly for about 5-6 minutes.
- Add the peeled and halved potatoes and parsnip and cover, cooking slowly for another 5 to 10 minutes until soft and yielding.
- Add the stock to the pan and bring to the boil. Simmer for 10 to 15 minutes.
- Add a pinch of salt and pepper to taste. Cream the leek and potato soup with a hand blender or in a food processor until silky smooth. Serve swirled with cream or a dollop of creme fraiche if desired.
- If you prefer a chunky soup with bits in just mash lightly with a potato masher and add salt and pepper to taste.
Serving Suggestions
This leek and potato soup is delicious on its own but you may wish to accompany it with garlic bread , or with cheese on toast slices to make a more substantial meal if you wish.
